CZ’s Jamaican Curried Chicken

Ingredients:
6 – 8     - Chicken thighs (skinless)
4 tbsp – Curry
2 tsp -  Paprika
2 tbsp -  Onion Powder 
2 tbsp -  Garlic Powder
2 tsp -  Powdered Cheyenne pepper
1 tbsp -  Salt
2 tsp -  Black pepper
2 tbsp -  Butter
4 tbsp -  Olive Oil (extra virgin)
1 large  - Onion (sweet) coarsely chopped
2 – Bay leaves
1 can  - Coconut Milk
1 can -  Chicken Broth
        
C@’s Chicken seasoning#2 (see below)

Directions:
Chop thighs in half, cutting through the bone. Thoroughly wash
chicken. Season with c@’s Chicken seasoning#2. Allow chicken
to marinade at least 2 hours.

In a cast iron skillet on medium high heat melt 2 Tbsp of butter
And 2 Tbsp of Olive Oil. Add chicken and brown until juices run
clear. Add remaining Olive Oil to a Dutch Oven or Large Boiler
on low heat. Place chicken pieces in pot with oil. In skillet add
onions simmering until almost translucent. Add all dry herbs to
onions (reserve 2 Tbsp of Curry). Continue simmering. Add
Coconut Milk stirring to blend with onions and pan droppings.
Add Chicken Broth and simmer to boiling. Remove bay leaves
and add remaining Curry.

Combine mixture with chicken and simmer on low heat for 45 min
to 1 hour. 

Great served over rice and/or with Roti.

1 part Smoked Paprika
1 part Onion powder
1 part Garlic powder
½  part Cumin powder
2 parts Allspice
1 part Powdered Cheyenne pepper
½ part Salt
